Nourishing Simplicity with Brooke Kelly Nutrition - my favourite Banana Bread Recipe
Every so often, you come across someone whose approach to health just feels right. For me, that’s Brooke Kelly a Clinical Nutritionist (BSc), cook and presenter with a passion for gut health and balanced living.
I’ve followed Brooke for years and often turn to her recipes for everyday nourishment. Her approach is simple and sustainable, grounded in real food and small, meaningful habits that make you feel good from the inside out.

One of my favourites is her Healthy Banana Bread a naturally sweet, protein-rich loaf that fills the kitchen with warmth and comfort.
Healthy Banana Bread
Ingredients

3 large very ripe bananas

3 large eggs

¼ cup maple syrup
-
¼ cup macadamia oil (or light olive oil)

1 teaspoon real vanilla extract
-
1 teaspoon ground cinnamon

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

¼ teaspoon sea salt
-
3 cups blanched almond flour (not almond meal)
Method

Preheat oven to 180°C and line a metal 9 x 5 loaf pan with parchment paper.

Mash bananas in a large bowl, then whisk in eggs, maple syrup, oil, vanilla, cinnamon, bicarbonate of soda, baking powder and salt until combined.

Add almond flour and mix gently until smooth and thick, taking care not to overwork the batter.

Pour into the prepared tin and bake for 45–50 minutes, or until a toothpick inserted in the centre comes out clean.

Cool in the tin for 10 minutes, then transfer to a rack to cool completely. Serve as is, or toasted with butter or almond butter and a sprinkle of flakey salt.
